Having cooked professionally for over 30 years, Nathan's style is one of simplicity but with complex flavour combinations using local, seasonal, responsibly sourced ingredients. Located in Port Isaac, Cornwall, Outlaw's Fish Kitchen has held 1 Michelin star for 12 consecutive years, whilst Outlaw's Bistro, situated within Outlaw's Guest House, opened in April this year and is listed in the Good Food Guide's 100 Best Local Restaurants 2026. Regularly appearing on TV programmes such as Saturday Kitchen and James Martin's Saturday Morning, Nathan's easy manner, enthusiasm and obvious passion for his work make him a hit with audiences of all ages. He has also written several successful cookery books, including Fish For Dinner (2023) and On Fish (2026).

Working closely with Brixham Fish Market and local suppliers, Hannah focuses on sourcing the very best seasonal fish, seafood and local produce, allowing quality ingredients to take centre stage. Her cooking is fresh, creative and full of personality, celebrating our incredible South Devon coastline while bringing something exciting and contemporary to TIDES at Abbey Crescent, Torquay.
